These deep-sea fish - Aphanopus carbo - which grow to over a metre long are found at depths of from 180 to 1700 metres . They rise closer to the surface at night and are then caught by Madeiran fishermen .

Their flesh is very tasty , known as espada , they are on the menu of most restaurants . Often served with a fried banana , this works surprisingly well .
