It is the first time I have seen this. I remember when I was young at Thanksgiving (the American holiday where everyone eats turkey) we had a table decoration that was a paper fold out turkey in this exact pose.
 
Are these wild birds?

Yes and no. They are wild birds that are native to the area - Fossil Rim did not place them there. However, they have taken up permanent residence and learned to get feed from visitors just like the deer and antelope, so they are habituated and not what I would consider truly wild.
