What is a mescal pit?

From a distance it is essentially a large clump of dirt and sand, but within the top part is a hole that is covered with wooden planks. The pit is traditionally used for cooking purposes but at the zoo it allowed me to wander off and get a couple of photos of the rear section of the Bobcat and Cougar exhibits.
 
Amigos, mezcal is a variety of tequila made from agave that traditional dictates be stored in wooden barrels for six months in a cool place. As the saying goes, PARA TODO MAL MEZCAL, PARA TODO BIEN TAMBIEN. For every ill, mezcal, for every good as well.
