If you have a chance to see the zoo's marsupial encounter program (11:30 AM on Fridays and Sundays last I checked) they bring out a sugar glider to show people. That is the only way that I have seen one - like you I have checked the nocturnal house for them multiple times without success.

I went in the house maybe three times that day. I only saw him on the last visit. The only reason I knew to stay and look was the sound of rustling leaves. Meanwhile, I saw no echidnas while in California. Oh well.
