@Summer Tanager Skimming through the photos of signage I took at the facility, this would be a Gray Triggerfish (Balistes capriscus). I don't have much interest in fish, at least to the point of recognizing what they are.
I know what you mean! I have a big interest in birds and lizards, and pretty strong interest in most mammals, amphibians, and turtles, so there isn't much room left in my brain to pick up fish (plus there's too many species to stay on top of them all).
