Oh interesting, on my visit the species on display here was the dinoflagellate plankton Noctiluca sctintillans. I suppose they can't leave the organisms in the petri dish for too long otherwise they die, so they'd have to periodically switch them from a behind-the-scenes holding tank, so may as well take the opportunity to display different species.
