Are the particular specimens Javan bantengs (Bos javanicus javanicus) or Burmese bantengs (Bos javanicus birmanicus), bcause I know the San Diego Zoo had both subspecies, and also on a side note Bantengs are very docile bovids, Animal keepers wouldnt need to use protected contact with them

Sorry to answer my own question, but from my research and from the coloration and morphology that I see in this this particular specimen, I am thinking that this specimen is a Burmese banteng (Bos javanicus birmanicus)
 
Males do lose their dark colour and go brown with age. Is this an old bull ,or just a different colour due to subspecies. He looks old to me.

it does look like an old bull, but also I think the colour in the photo is off.
