A self started game ranch

As many of you have had conversations with me in the past, I currently raise Hereford Cattle and Bison. Being in my mid 20s my father has decided to let me take over some aspects of the business. Now the core mission of our farm will not change, but as you guys know I am hoofstock person. Being in Alabama what I can import in state is limited because of state law restricting Cervids to protect the whitetail herd. So my main focus would be on animals that I don't think would be too much more difficult than cattle or bison. After talking with my veterinarian (and ones from 4 local zoos - Birmingham, Atlanta, Knoxville, and Montgomery) I think I am ready to take the steps. These will be baby steps as I learn as a I go. And yes to probably the dislike of fellow zoochatters there will be some trophy management but mostly the animals are for hobby/local attraction as we come out well ahead of even selling our grass fed hereford and Bison to Whole Foods as well as my actual careers.

So the reason I come to Zoochat is sort of a primer. Obviously my first look is going to be Texas and their many game auctions. What I need to know going in is what are species that are relatively common, uncommon, rare. And what would thrive in the pastures/woods of Alabama? Warmer/Wetter than Texas but still a pronounced cool season (though snow is a rarity and I will have shelter/tree cover)
 
I have no experience whatsoever on game ranches, but being that cervids are restricted, I would suggest blackbuck antelope. This is a suggestion.
