I have always been very fortunate to see the sun bear out and about in the AM, I tend to go to that area either first or around 11:30AM.
Anoa are usually milling about. You can see the entire habitat and most of their barn, so you will have very good odds of at least seeing them.
Clouded leopard are only visible if you can get to the animal care center (which is not the same as the Manatee Critical Care Center), but I don't think they are doing tours of it right now....you can just peek the habitat from the end of the pathway (where it is blocked) between the black bear habitat #1 (the crummy one) and the flume ride, but seeing one under those circumstances would take super good luck.
Panthers are often the most active close to the keeper encounters which are at 11:30 and 3:30, but they vary from being about the panthers, alligators, or panther/bear, so check the sign or app the day you go and it will say which area it is in, but all three "locations" are very close together, within a couple of second walk, so it almost doesn't matter.
