This would probably be better off in zoo cafe. Personally I believe it is foolish to bring back extinct species that were not made extinct by people.

I’d personally bring back the one of the extinct subspecies of tiger, or some recently modern species such as the aurochs, Japanese sea lion, baiji or one of the species declared extinct in that recent fish and wildlife services report. However if I had to pick one it would probably be the Caribbean Sea lion, as it is a really interesting and unique species.
