This is a list of animals seen in The Lion King, 1 1/2, Simba’s Pride, Lion Guard, and the 2019 Live Action. You can put down any animal on the list that I have missed or you would like to put down.
Main Character Animals
African Lions
-the main protagonists and villains
Common Warthog
-a supporting character and friend of the protagonist
Meerkat
-a supporting character and friend of the protagonist, and Timon’s mob.
Mandrill
-a supporting character, a shaman, and portrayed like a real Mandrill in the live action
Tanzanian Red-billed Hornbill
-a supporting character, the king’s advisors
Spotted Hyenas
-supporting villains and later allies in the Lion Guard.

Is't there a pangolin and a grass mouse in the 2019 version (I refuse to call it live action because there is absolutely zero real footage there). And the first movie has vultures and crocodiles, right?

For the first movie : OK for the vultures, but I don't remember any crocs.
There are also all the main species of savanna ungulates, plus a lot of birds (including Marabou Storks, Flamingos, Ostriches...), a Chamaeleon, and even Giant Anteaters (the only non-African species).

The crocs are in the second movie, where there are also Okapis, Babboons, Mousebirds, and a flock of very annoying small birds (Barbets?).

In the 2019 movie, a lot of strange mammals gather in Timon's and Pumbaa's forest. I remember Elephant Shrew, Bat-eared Fox, Dik-dik and Aardvark.

I don't know the recent (2010's) animated series at all, but I remember toys representing a Panther and a Honey Badger.

Original movie has a black rhinoceros, several Damaliscus lunatus, a cheetah, elephants, some sort of gazelle, giraffes, zebras, vulturine guineafowl, gnus, several fictional birds (at least one reminiscent of an egret and one a hornbill), hartebeest, kudu, African buffalo, oryxes and vervet monkeys, in addition to those species you mentioned, all in the first five, no four minutes. Later movies sought to be more diverse, especially the 2019 remake, making listing all species increasingly difficult. TV series like ‘The Lion Guard’ even have their characters travel overseas, introducing polar bears and penguins and such. Not to mention that there were other spin off series you seem to be unaware of, such as one where I believe Timon and Pumbaa go to South America...
All I can say is good luck. You’ll need it.

Black Rhinoceros
Topi
Gemsbok
Cheetah
Marabou Stork
Greater Flamingo
Lesser Flamingo
Thomson’s Gazelle
Reticulated Giraffe
Leafcutter Ant

-(native to South America)
Vulturine Guineafowl
African Bush Elephant
Intermediate Egret
Cattle Egret
African Grey Parrot
Red-billed Oxpecker
Yellow-billed Oxpecker
Masked Weaverbird
European Roller
Greater Kudu
Grey-crowned Crane
Vervet Monkey
Blue Wildebeest
Aardvark
Banded Mongoose
Northern White Rhinoceros
Cape Buffalo
Common Hippopotamus
White-backed Vulture
Gunther’s Dik Dik
Black and Rufous Elephant Shrew
Bat-eared Fox

several fictional birds (at least one reminiscent of an egret and one a hornbill)

Others are based on quetzal (South American), elegant trogon and cardinal (both North American). Others may be similar to a flame bowerbird, a lory, a bee-eater/paradise flycatcher cross and a kingfisher/momot cross but are probably just random birds drawn to have contrasting colors.

And I agree, the original film is better. And actually, the best part of the franchise is the real African wildlife - if you can, travel to see it without the Disney intermediaries.

The Mufasa: The Lion King Movie so far introduces Olive Baboon, Nile Crocodile, Southern Carmine Bee-eaters, African Crested Porcupines, Unknown Species of Bat, East African Lowland Honeybees, unknown species of Large Blue Butterfly, and although not a species, but skin variant White Lions.

Most if not all the animals in the original 2019 Remake would be returning with a few pointers like I do see Adult Female Greater Kudus and Spotted Hyenas that have a minor role and surprisingly a glimpse if you miss scene in which hyenas are among the animals bowing down to Mufasa.

None of those asterisked species are found in Africa though, and The Lion King is supposed to take place in a universe without humans, I think this movie might just be a lazy cashgrab...

The Mufasa: The Lion King Movie had most of the Animals from the Previous Movie returning, but introduced:
  • Nile Crocodile (Crocodylus niloticus)
  • Southern Carmine Bee-eater (Merops nubicoides)
  • African Crested Porcupine (Hystrix cristata)
  • Olive Baboon (Papio anubis)
  • Egyptian Fruit Bat (Rousettus aegyptiacus)
  • Shoebill (Balaeniceps rex)
  • White-Barred Acraea (Acraea encedon)
  • Western Honey Bee (Apis mellifera)
  • Giant Blue Swallowtail (Papilio zalmoxis)

I did find it a bit interesting how Mufasa: The Lion King lacked many of the non-megafaunal mammals that were featured in the live-action* version of The Lion King (banded mongoose, bat-eared fox, black and rufous elephant shrew, dik-dik, bushbaby, etc). Granted, many of those were simply “extras” who served as Timon and Pumbaa’s less close bug-eating friends also living in their forest, and so it made sense that they didn’t return for Mufasa.

* It’s not technically live-action (save for the opening shot of the sunrise) but as it is part of the canon of Disney live-action remakes I am still choosing to refer to it as such.

Well, a Bat-eared Fox and an Aardvark were seen in the opening also in the movie were the Hyenas.

Although not as Antagonists this time, as they were once part of the Pride Lands and were among the animals that bowed to Mufasa. During the Opening scene, the Hyenas were seen welcomed back to the Pride Lands.

There is an unknown fish looks like a small tigerfish and an African Civet.

True, actually (somehow) forgot about the civet when I posted this originally.
