@TinoPup you nailed it, Pale fox, Tanuki (though plentiful in Japan), island fox, grison (that's definitely a big one) I have not seen. The rest I have.

@ChunkyMunky pengopus not limited to mammals, inverts (specifically insects) I'm not as interested in.

Isn't there a place in Texas that has crab eating raccoons?
Grison is only in two zoos in Wisconsin - Timbavati Wildlife Park and Wildwood Wildlife Park - as well as Zooville USA in Florida.

Platypus - only at SDZSP

Hawaiian Monk Seal - only at Minnesota at possibly a collection or two in Hawaii

Ugandan Kob - only at SDZSP

Barbary Deer - only at SDZSP

Calamine Deer - only at LA and Phoenix

Desert Bighorn - kept at 8 different collections - ASDS, CALM, Hemker, Living Desert (CA), LA, Phoenix, SDZSP, and Southland Safari.

Hooloch Gibbon - only at Gibbon Conservation Center

Emperor Penguin - only at SeaWorld San Diego

Lake Titicaca Frog - lots of collections have this species now - Brookfield, Dallas, Fort Worth, Saint Louis, Atlanta, Oklahoma City, Omaha, Denver, Detroit, Columbus, Cincinnati, Turtle Back, Knoxville, and possibly others.

Hoolock should still be at Louisiana Purchase Zoo as well.

The Texas facility is Aggieland Wild Safari, though I don't think anyone here has been there recently to confirm its still there. Wellington Conservation Center in Florida also has one.

Pale fox are actually mostly present in Florida - Wellington Conservation Center, Wildlife Wonderland, and Safari Bob's all have, or recently had, the species. I didn't mention crab-eating raccoon as they've been more common in Florida, as well. In TX there's Aggieland Safari, Franklin Drive-Thru Safari, and Oak Creek, though I'd check first as the former two frequently change their species lists. Barn Hill Preserve in Louisiana has held the species for years. Wellington Conservation Center should have them, as well.

Raccoon dog can only be seen at Oklahoma City now :(

Island Fox is currently at California Living Museum (CALM), Santa Barbara Zoo, and Living Desert CA, so some nice options there.

A few more places have them now. World Wildlife Zoo in AZ holds them and has been breeding them. I recently found photos of some in a pet store in TX!
 
The Channel Island Fox exhibit at the Santa Barbara Zoo is a much larger and more natural looking exhibit than the one at The Living Desert. Santa Barbara has 2 brothers, while The Living Desert houses a male who used to live in Santa Barbara.

Los Angeles Zoo currently has 2 mountain tapir exhibits, one is marked on their map and the other is across from the Sumatran tiger exhibit in the former Greater One-Horned Rhino exhibit between the Tadjik markhor exhibit and former hippo exhibit.

The Living Desert has a very nice, large Desert Bighorn Sheep exhibit compared to LA and the SDZSP.

Sea Life Park Hawaii had them when I visited in March. The Waikiki Aquarium has an exhibit for them but didn't have any at the time, not sure if that has changed.
