This article by BBC Sports is also pretty good for highlights:
Tokyo 2020 Olympics day-by-day guide

Since I follow the olympics from 8am to 9pm i guess i might conclude some of the best action (mostly one that I watched) here.

Day 1 (24/7)

First gold medal in this Olympics is win by China's Yang, in the 10m Air Rifle, with a huge help in the last shot from ROC's athlete.
China got 2 weightlifting gold (how surprising)
Fencing also produce 2 medals, the bummer is my territory's athlete Kong was out in quarters.
Iranian athlete Foroughi won gold in 10m Air Pistol, great story from him competing in his first Olympic at 41.
Road cycling(men) came to Ecuador's Carapaz, fair play to every athlete there cycling over 6 hours.
Zaza from syria compete in table tennis at the age of 12, and she get all my respect for even entering this competition in sych a young age.

Day 2 (25/7)
Table tennis(mixed) was into semi, with China's team dominating so far (our athletes again lost in quarters :( )
Tunisian swimmer Hafnaoui win 400m freestyle against all odd.
World record is broken by Australia in 4x100 freestyle women.
The OR for women's 100m backstroke is beaten three times in three heat.
Road cycling (women) is won by Austrian Kiesenhofer, quite surprising consider she's not a big hit in any cycling competition.
Both Abe won gold medal in Judo kn their respective category, the first time two siblings have won Olympic gold medals on the same day in an individual sport.
France defeat USA in basketball 83 to 76, consider USA last lost in Olympic basketball is in 2004, a great upset.
The first skateboarding champions in Olympics is produced, with Japan's athlete winning over USA's big name Nyjah.

This is it and if you got any others moment share here. Tmr day 3 we go again.

I will admit that I am mildly looking forward to the rock climbing. It looks really skilled and fun to watch.

France defeat USA in basketball 83 to 76, consider USA last lost in Olympic basketball is in 2004, a great upset.

Not entirely a surprise, the team has negative chemistry and far too much ego (reminds me of a certain international football team in blue shirts actually) - lost to Nigeria and Australia in their warm up games. France's team really isn't bad as well, they have the Defensive Player of the Year and lots of talent.

3 v 3 Basketball, not seen this until 2 days ago, its excellent viewing, men's & women totally equally.

Day 3 (26/7)

Best day in the Olympics. Hong Kong won gold! Our athlete Cheung Ka Long won gold in the fencing male’s foil. This is our second gold medal ever and our fourth medal in any colour. Also our first male athlete to win gold. We wait 25 years for this moment and I’ll enjoy it for long.

In other news:
Philippines won their first gold medal ever, weightlifting from Hidilyn Diaz.
Ledecky, the world record holder, lost to Titmus in 400m freestyle.
The top 3 of Women skateboarding has an age of 42 ……combined, with gold and silver both 13 years old girl.
UK win diving over China by 1.23 points, after an error from China in the 4th dive.
ROC won gold in teams men gymnastic.
Thomas Pidcock from UK won cycling mountain bike.
And Japan won Table tennis mixed double after a hard fought with China.

Yeah im fully into the Olympics now. I just cant get out of all these events.

Day 3 extra:
I didn’t read this till today but the bronze medalist in male skeet shooting, al rashid abdullah from Kuwait, is 57. Incredible from him competing in the highest level at that age.

Day 4 (27/7)
UK won gold and silver in men 200 freestyle.
Jacoby from Alaska took gold in breaststroke, the first US swimmer from Alaska.
Bermuda’s Flora Duffy won the women's triathlon, being the first Bermudian gold medalist.
Naomi Osaka is out in tennis.
Both surfing medals are decided, the new sports in the Olympics this year.
China win diving by 50+ points (how surprising bruh)
Turkmenistan got their first medal ever in the weightlifting women 59kg, but was blown out of water by the gold medalist Kuo from Chinese Taipei.
Estonia got their first gold since Beijing 2008 in Women team epee.
ROC won gold in women's team gymnastics over USA, maybe because of Biles unable to participate in the other 3 events.
How did I forget softball? The host nation won the new sports event against the US.

30 seconds of googling reveals 2 golds in women’s judo; what makes them good at this is an entirely different (and more intriguing) question!

Day 5 (28/7)

Hong Kong finally proved that we can have a world-class swimmer today!
Titmus broke the OR in the 200m freestyle, and Hong Kong's Haughey won silver after breaking the Asian Record. Really proud of our athlete as this is our first medal in swimming.

Other news:
Rowling medals have been decided.
UK won the 4x200m freestyle relay, narrowly missing out on WR by 0.03s.
The road cycling time trial champions have been decided, with Slovenia’s Primoz Roglic winning the men's race.
Fiji win rugby sevens over New Zealand, they win gold again after 2016.
Tsitsipas was out of the Olympics.
In Men’s gymnastic all around, Hashimoto got a 14.933 in his last rotation(horizontal bar), narrowly overtake China’s Sun and ROC’s Nagornyy.
And the 3x3 basketball event was won by Latvia(men) and USA(women)

Day 6(29/7)

Top 3 of women's 4x200m freestyle relay all broke the world record, and ultimately China won that over the US and Australia.
A few OR have been broken as expected.
San Marino’s Alessandra Perilli got her first medal and her country’s first medal, getting a bronze in women’s trap shooting.
Very Very Very exciting matches in the Men's Table tennis semi final.
Jessica Fox from Australia finally won gold in Canoe slalom.
Sunisa Lee from the USA won all-around women’s gymnastics.

Do anyone even care what I said here? lol

Day 7(30/7)

Hong Kong got our second medal! It’s Siobhan Haughey again winning silver in women’s 100m freestyle, with Australia’s McKeon breaking OR again.
Schoenmaker from South Africa broke the WR in women's 200m breaststroke.
New Zealand won gold from rowing men’s eight.
BMX Racing medals were decided, but more importantly I wish the crashers a speedy recovery.
China won gold and silver in Women’s Trampoline Gymnastics.
We’re so close to see another country winning in archery, but after a shootout South Korea’s An edge it.
Djokovic is out!
Ma Long became the first player to win four Olympic gold medals, and the first one to win consecutive Olympics men’s singles in table tennis.

The UK has its worst rowing regatta for years, after the long term coach Juergen Grobler retired; I suspect this is much more than coincidence (although of course not the whole story). Already some of the rowers are clearly splitting into pro- and anti- Juergen camps.

Day 8 (31/7)

The inaugural mixed team relay happened, with the UK winning in an exciting race. USA got second and France got bronze.
Dressel broke the WR in 100m butterfly.

Djakovic cant even get bronze! No medal for the world no.1.
New Zealand won women's rugby sevens over France.
Women's 100m was won by Thompson-herah, breaking a 33 years old record, clocking 10.61.
The 4x400m mixed relay is a close one, with Poland in first and the Dominican Republic narrowly got second over USA.
Chinese Taipei got their first gold medal in badminton in the men's double.

Day 9 (1/8)
BMX freestyle medals have been decided.
Swimming last day gave us some good races, with Dressel winning fifth gold, so does McKeon from Australia with four.
Israel got their first gymnastic medal, and it is gold (men’s floor). Dolgopyat win that over Spain’s Zapata and China’s Xiao.
Whitlock from the UK won the men's pommel horse.
Zverev won gold in tennis.
Men’s golf is won by Schauffele(USA).
Venezuela’s Rojas smashed the WR in the women's triple jump. In the last jump as well! The old WR is in 1995.
Barshim and Tamberi shared the gold medal in high jump! They both have an equal record, and the judge seems to ask them if they wanted a jump-off. They agreed to not do that, and instead both got gold.
And in the men’s 100m final, Jacobs from Italy won gold! First Italian to win that event.
And China reclaimed gold in women’s singles, with Chen winning against Chinese Taipei’s Tai.
