Romania and Spain I will do but I switched up the order a bit in my notes so Switzerland comes before alphabetically. Russia I might not due for a number of reasons, at least not imminently

Avintes: Black-faced black spider monkey, Diademed amazon, Greater necklaced laughingthrush, Spanish raven, Four-lined girdled lizard, Tiger ratsnake.
Avintes (Gaia): Iberian badger, Black and white munia, Black-winged kite, Iberian jay.
Cabecao: Calandino, Iberian barbel, Spanish minnowcarp.
Lagos: Blue-billed curassow, Dusky-headed conure, Giant Canada goose, Green magpie, Lesser blue-eared glossy starling, Mindanao rufous hornbill, Western plantain eater.
Vasco de Gama Aquarium
One of two quality aquariums in Lisbon, VdG has a lovely collection in some nice exhibits. It appears to me to be a bit less flashy and commercial than the Oceanario in Lisbon also. This place also led me to the fishes in the genus Achondrostoma, extremely endangered freshwater fish found in small streams in Portugal, since the aquarium is heavily involved in their conservation.
Amphibians: Alpine crested newt, Mediterranean toad, Perez's frog, Portuguese fire salamander, Roughskin newt.
Fish: Angolan tilapia, Baillon's wrasse, Barred hogfish, Blacktail comber, Calandino, Canary damsel, Chameleon cichlid, Giant goby, Iberian chub, Portuguese nase, Sand sole, Senegal seabream, Senegalese sole, Sixbarred angelfish, Spotted seabass, Thickback sole, Western ruivaco, Yellow-headed goby.
In summary, 23 rarities, of which 8 are bolded and 5 are underlined.
Lisbon Oceanario
The second of the two fantastic Lisbon aquariums, this city's focus on aquatic life stems undoubtedly from its position - at the mouth of the Tagus where it throws itself into the Atlantic. This aquarium does more to showcase the grandeur of the ocean - the sharks and rays and groupers contrasting with the generally smaller fish in VdG.
Mammals: Alaskan sea otter.
Birds: Common murre, Razorbill.
Amphibians: American toad, Dusky salamander, Gray tree frog.
Fish: African moon tetra, Bar jack, Atlantic chub mackerel, Blackeye goby, Black perch, Blacknose shark, Blacksmith chromis, Blue hottentot, Bluebanded goby, Bull ray. Canary rockfish, China rockfish, Devil ray, Dogtooth grouper, Fransmadam, Kelp bass, Magpie perch, Pygmy leatherjacket, Puffadder shyshark, Rainbow seaperch, Red stumpnose, Redfingers, Round fantail stingray, Sailfin sculpin, Sapphire damsel, Schoolmaster snapper, Sixbarred angelfish, South American pilchard, Striped cowfish, Swellshark, Tiger rockfish, Treefish, Two-lined monocle bream, Two-tone fingerfish, West Atlantic devil ray, White steenbras, Yellow-brown wrasse.

Lisbon Zoo
The somewhat less impressive Lisbon zoo has nevertheless a decent collection, with a few nice rarities such as the Black-faced impala or Iberian lynx as well as a strong parrot collection. Despite this, its exhibits are fairly average to poor.
Mammals: Angolan giraffe, Black-cheeked red-tailed monkey, Black-faced impala, Cape eland, Iberian lynx, Syrian brown bear.
Birds: Ambon red lory, Aymara parakeet, Blue-streaked lory, Golden-fronted parakeet, Kuhl's brown-necked parrot, Red-browed amazon, Short-tailed parrot, Southern blue-crowned parakeet, Southern red-fan parrot.
Reptiles: Adanson's mud turtle.
In summary, 16 rarities, of which 5 are underlined.
Lourosa: Black-billed curassow, Nocturnal curassow, Picazuro pigeon, Red-billed curassow, Red-winged tinamou.
Miranda do Corvo: Iberian badger, Iberian beech marten, Iberian mongoose, Iberian magpie, Marbled newt.
Monte Selvagen: Angolan vervet, Northern pig-tailed macaque, Rueppell's glossy starling.

Porto Moniz
This place in Madeira appears to have quite a lovely collection in fairly nice exhibits. Notable rarities include the Madeiran ray and Emerald wrasse.
Fish: African striped grunt, Atlantic chub mackerel, Blacktail comber, Brown moray, Canary damsel, Dotted moray, Emerald wrasse, Forkbeard, Island grouper, Macaronesian sharpnose puffer, Madeira rockfish, Madeiran goby, Madeiran ray, Pike dentex, Spotted butterfly ray, Spotted torpedo, White trevally.
In summary, 17 rarities, of which 5 are bolded and 2 are underlined.

Zoo Basel
Perhaps has a slightly less complete ABC collection than other large zoos, but makes up for this with some lovely rarities pretty much entirely in very nice exhibits. Not the best zoo in the country (Zurich), but not too far behind either. Its rarity collection is predominantly comprised of fish, but it does have a lovely tanager collection also.
Mammals: Ansell's mole rat, Kalahari lion, Woolly monkey.
Birds: Bay-headed tanager (ssp. toddi), Blue-necked tanager, Ring-necked dove, Sociable weaver, Turquoise tanager (NS).
Reptiles: Northern Australian snapping turtle, Olive tree skink, Sakishima grass lizard, Tentacled snake.
Amphibians: Hellbender.

As such, while this list comprises predominantly exotic animals, this does not paint the real picture of the park's collections. Despite this, the rarity list has a few lovely species, such as the only Arctic terns and Ussuri brown bears in Europe.
Mammals: Ussuri brown bear.
Birds: Arctic tern, Turquoise tanager (NS).
Reptiles: Allison's anole, Alpine viper, Emerald long-tailed lizard, Giant ameiva, Madagascar flat-tailed tortoise, Mauritius day gecko, Red diamond rattlesnake, Reisinger's tree monitor.

A nice collection, but one which ZTL apparently somewhat overstates - it does not have most of the amazing sunbird species it claims to, or at least not on show. Fortunately, it still has a really nice collection with a few very interesting species like the Four-eyed opossum, Collared sunbird and Tropical mockingbird.
Mammals: Common water rat, Crab-eating raccoon, Four-eyed opossum, Yucatan squirrel.
Birds: Blue ground dove, Collared sunbird, Common ground dove, Indigo bunting, Tropical mockingbird, White-winged dove, Yucatan jay.
Reptiles: Belize slider, White-lipped mud turtle.
Amphibians: Greenhouse frog.
Fish: Gilded catfish.
La Chaux-de-Fonds
A nice reptile collection I hadn't heard of before, this place appears to have a fairly interesting venomous snake collection in particular.
Reptiles: Brazilian lancehead, Caucasus viper, Chinese cobra, Chinese moccasin, Egyptian cobra (NS), Guatemalan spiny-tailed iguana, Koch's day gecko, Lansberg's hognose viper, Levantine viper, Mali spiny-tailed lizard, Sochurek's saw-scaled viper, Timor monitor.
Fish: Rhone streber.
In summary, 13 rarities, of which 1 is bolded and 1 is underlined.
Langenthal: Red-headed finch
Aquatis Lausanne
The biggest collection of freshwater fish in Europe, and definitely one of the best as well. Some lovely herps to add to a whole host of unique freshwater fish species.
Reptiles: Alpine viper, Chinese habu, Sumatran pit viper, West African crocodile.
Amphibians: Alpine crested newt, Italian alpine newt, Marbled newt, Sardinian tree frog, Shangcheng stout salamander, Southern marbled newt.

Zoo Zurich
One of the best quality zoos in Europe for sure, with some of the most amazing exhibits in the world, not least the Pantanal and Lewa areas, However, the crowning glory of the park is of course Masoala, a large indoor rainforest recreating the jungle of North-Eastern Madagascar. Lemurs, geckos and birds roam free within. Otherwise, the zoo has a good collection, though not on par with other European juggernauts perhaps but with some nice species either way.
Mammals: Goodman's mouse lemur, Mongolian wolf, \Nubian ibex, Sri Lankan elephant.
Birds: Blue-necked tanager, Green-backed trogon, Madagascar blue pigeon, Panama boat-billed heron, Pitta-like ground roller, Plush-crested jay, Red and white crake, Saffron finch, Spectacled eider.
Reptiles: Black-bellied slider, Common flat-tail gecko, East African black mud turtle, Eastern shingleback, Giant monitor, Saint Vincent's bush anole, Santa Cruz giant tortoise, Sonoran desert sidewinder, Volcan Wolf giant tortoise, Spotted Martinique anole, Western hingeback tortoise, Western cliff anole.
Amphibians: Red and blue poison dart frog.

Slovakia
Zoo Bojnice
Definitely the best collection in Slovakia, Bojnice has twice the rarities of every other zoo in the country combined. It boasts a nice herp collection along with a fantastic mammal lineup.
Mammals: African grass rat, Agile wallaby, Hamlyn's monkey, Persian jird (rossicus), Seurat's spiny mouse, Two-spotted palm civet, Western lesser white-nosed monkey.
Birds: Goliath heron.
Reptiles: Common variable skink, Western Madagascar tree boa.
Amphibians: Treasury Island tree frog.
Fish: Bluehead tyrannochromis, Chilumba zebra mbuna, Dusky parrotfish, Fenestratus cichlid, Malawi trout.
Bratislava: East African sand boa (NS), Indian black turtle, Little corydoras.
Kosice: Bezoar ibex, Wagner's gerbil, Australian sarus crane, Upper Guinea bulbul, Common wondergecko.
Will be back with Spain, shortly followed by Sweden in due course. After that, only Ukraine and the UK remains, so hopefully I can complete the thread before the new year.

One of the best quality zoos in Europe for sure, with some of the most amazing exhibits in the world, not least the Pantanal and Lewa areas, However, the crowning glory of the park is of course Masoala, a large indoor rainforest recreating the jungle of North-Eastern Madagascar. Lemurs, geckos and birds roam free within. Otherwise, the zoo has a good collection, though not on par with other European juggernauts perhaps but with some nice species either way.

This whole post will be dedicated to Loro Parque, then the rest of Spain will follow. Loro Parque is quite simply the biggest parrot collection in the world and by my rarity system, the best bird collection in the continent (though this is in most other respects not true, since most place it behind Walsrode). Despite this, the astonishing parrot collection meant it was actually faster to go through the psittaculine section on ZTL rather than search up Loro Parque's species list. The park holds the vast majority of parrot species in captivity in Europe, with 210 parrot rarities. In context, the 20 additional rarities of other vertebrate groups almost appear insignificant, yet the park also holds Killer whales and Chinstrap penguins.

A collection that I had more or less never heard of before but actually appears to have loads of rarities, most of which are unique in Europe. Any fish lover passing by the area should definitely take a look - it appears to be a somewhat unsung treasure hoard of fish rarities! With a reminder that my lists for fish are by no means complete:

Bratton Fleming (Exmoor)
A lovely collection, particularly for small carnivores. It is well known for holding the only Spotted fanaloka on public display in Europe along with Neunkirchen, but is also home to taxa such as the West African ratel or the Bluestripe garter snake.
Mammals: Arabian rock hyrax, Indochinese binturong, Ringtail, Spotted fanaloka, West African ratel.
Birds: Buff-necked ibis, Honduras boat-billed heron, Northern festive amazon, Thick-billed parrot.
Reptiles: Bluestripe garter snake, Californian red-sided garter snake.

Another lovely little zoo, this time in the Cotswold's, a very beautiful and striking area in itself. The park holds a particularly impressive South American and Madagascan collection, with rarities such as Crowned sifaka, Greater bamboo lemur and Splendid mantella.

The best zoo in the UK without a doubt, and also the best collection in the country. 80 rarities in total, including Coquerel's sifaka, Black-browed barbet, Bermuda skink and Tuatara. A particularly large number of Asian rarities due to the relatively recent opening of Islands as well as the numerous pre-existing complexes containing Asian species. The zoo also has a strong Madagascan collection as well as a fair few waterfowl rarities.
