Which are?
Why not? For managing wild areas such as grassland via extensive farming in America, you already have a well suited native bovine species at hands: the American bison.
Why not? I've joined and collaborated with established projects in the past (and still today) - and mostly, it worked just fine or even really well. Why reinvent the wheel?
Bison are a plains species aurochs were river bottom and woodland species. You have obtained genetic material from any of the auroch projects?

The American Plains Bison (Bison bison bison) is a plains (sub)species; the aptly named American Wood bison (Bison bison athabascae) is considered a woodland (sub)species. Speaking of subspecies & habitats: at least for the European aurochs subspecies Bos primigenius primigenius, various habitats, including open grasland, wetlands and forests, have been mentioned.
