Would you like to write a book or to make a website? If a book how big you plan?
It is a great idea to do something like this. But I hope it will be a little different from many of the books or websites where you can read only about pandas and other more or less popular animals. It doesnt matter they are popular but many of them are not so endangered as some other which are not mentioned.
I will be thinking about the species.

No offense, but: spare yourself the work. There exist already several good or even excellent versions, like
ARKive - a unique collection of thousands of videos, images and fact-files illustrating the world's species
EDGE of Existence :: Evolutionarily Distinct & Globally Endangered
Animal Info - World's Rarest Mammals
And unless you have a very, very extensive private animal photo/video collection or are a skilled and gifted animal painter, you might end up with multiple infringements of copyright when trying to get some decent pictures.

I'd suggest you go through the Red List, find some species you've never heard of, and use them in your book. That way you research and learn about something new.

Alternatively, go to http://www.cites.org/eng/app/appendices.shtml
This is the list of species on the CITES appendices. Most of them are either threatened or endangered.
