I thought it might be a good idea if we made a thread for this as many threads have been going this way (might be worth doing one for NZ too, any takers?).
There are many Exortic nimals held by Unis and the like, aswell as the exotic Farm Species, Lets try and make a list, i will edit this post will all the new ones. Lets not bother about fish and birds try to stick to things taht are more zoo-ey
Ohh and everyone from other countrie can we please try and keep this aussie

American Bison - Farming
Blackbuck - Farming
Nilgai - Hunting
Banteng - Hunting, Farming?
Asian Water Buffalo - Hunting, Farming
Guanaco - Any left?
Various Deer, Red, Fallow, Axis, Sambar, Rusa - Hunting Farming
Sika - see below
Wapiti - Anyone clarify, Monty?
Hog Deer - Whats happening with them now?
Dromedary Camels
Nile Lewche - Tippery
Zebra - Tippery
Hymadryas Baboon - Royal Prince Alfred Hosp, renal research, approx 150 animals
Japanese Macaque - Launceston City Gardens, Tassie
Long-Tailed - See below
Pig-Tailed Macaque - held at the National Macaque Facility at Werribee. There are approximately 150 Macaques at this facility divided into 10 colonies kept in separate rooms. The Australian National University in Canberra has 9 Macaques species unkown.
Marmosets (common?) - At the CSIRO in SA, national marmoset colony, 15 pairs imported from the UK. Also some at Uni New Elngland, in Armidale NSW, under Dr Lesley Rodgers
Other Primates - there is a colony of 70 unspecified Primates being used by the Department of Defence, primarily for malarial experiments.
I have also heard of some Hyena in some uni, dunno where
