I have noticed they are very sensitive animals myself, I have only watched White, Black and Indian and all three in my experience, you do sum up with the words sensitive, nervous and intelligent. I have been lucky (as a non keeper) to touch and have some interaction with rhinos, Whites mainly and once an Indian and they where very relaxed and enjoyed a tickle on their ears and one white female even raised her back leg a little to let me scratch her softer thinner skin at the top of her leg/ thigh area. I have seen Whites with new born and they are great mothers showing great care, protection and awareness. They also show great patience as mothers too as the little ones can be totally manic at times!.
It is interesting to hear how docile the Sumatran ones are in comparison to the three other species, and that a wild caught was eating from you after 24 hours is amazing.
