Melbourne Zoo or Werribee - which to visit?

I'd definitely recommend the deluxe safari with the species in mind that you'd really like to see; you get to spend a lot more time with the bison, Przewalski horse, camels, and give you a lot better chance of seeing the waterbuck well. They can all be seen on the usual bus tour, but that is a lot more rushed. The vervets are seen on foot, so are usually not too tricky to view-- but then it does still come down to luck.
 
My main drive to go to a zoo is to see a species I haven't seen before and Werribee has more species I haven't seen compared to Melbourne so I'm more inclined to go there. The many wild native animals sounds interesting, hope to see lots of them wandering around

It sounds like a lot of support for Werribee, which combined with the fact you’ve never been there before or seen a few of the species you’re interested in seeing make it the best choice imo. I’d definitely take the advice of @marmolady on doing the Delux Safari Adventure. It looks like an excellent experience (at a reasonable price) and will allow you to get a closer look at many species.

While the elephants will still be a long way off, you’ll also get to at least see the foundations of what will be on the world’s best elephant exhibits.

The deluxe safari is also really good if you are into photography - you get more time to take better shots
