I’ll write a full list sometime, but to start, favourite Mollusc - Platevindex mortoni. If the person who named it doesn’t have a soft spot for it, then what chance has it got? Mind you , Melibe leonina seen a loooong time ago in the Steinhart aquarium is pretty spectacular and, if reincarnated I always state I want to come back as as a Blue dragon nudibranch, can’t think why spending a lifetime sunbathing on the Great Barrier Reef could be appealing! But how could I leave out the bad-boy Glaucus atlanticus which feeds on Portuguese men-o-war?

Nice choices! Just one thing though, I believe you confused Paleozoic and Cenozoic. The Paleozoic is the era that occurred before the dinosaurs (and when Dimetrodon lived) and the Cenozoic is the one we're currently in (and when the woolly mammoth lived).

Parrot: Spix macaw or the golden conure, can't decide.

Passerine: Royal flycatcher or green headed tanager.

Waterfowl: Probably the Brazilian Merganser, because it being a native species and its endangered status.

Ok, my lists with reasons. I’ll start with the easiest, for reasons that I’ll explain in subsequent lists.
Recently extinct -O’o; the only bird family to have been known to go extinct in my lifetime. Honourable mention for Po’o’uli, which I remember being discovered as well as dying out.
Cenozoic - marine ground sloth, proving evolution takes some weird turns!
Mesozoic - Deinocheirus; what did it look like when alive?
Palaeozoic - Anomalocaris. Most of the Burgess Shale fauna in fact.
