Too difficult to choose from all species, so I limit it to species I have seen in real life that was already a challenge:
- Lear's macaw: beautiful and intelligent bird, a joy to work with
- Common kingfisher: one of the prettiest birds around and a delight to observe fishing (and photographing)
- James's flamingo: my favorite birdfamily and this species being the rarest in captivity
- Carmine bee-eater: bee-eaters in general are very beautiful and always active birds. But this species is my favorite and having seen them in captivity and the wild is a nice extra.
- Japanese crane: always nice to see, not always nice to work with.
- Steller sea-eagle: impressive birds and holding them and seeing them from close by only adds to my fascination
- Zebra finches: my passion for 25 years now to keep and breed them. All the behavioural studies on this species give an extra dimension to this species.
- Flame bower bird
- Tufted puffin
- Curl-crested aracari
 
I can't believe that I didn't see this sooner! It would be hard for me to narrow my list down to a top 100, but I'll give a top 10 a try in no particular order.

I'm going to stop before I change my mind again! I love all of the doves, turacos, cranes, lories, perching ducks, sunbittern, kagu, Inca Tern, tanagers, bulbuls, and the list goes on!
 
Much inspired by the threads of @Austin the Sengi for top 5 favorite deer and antelope, I thought I'd make one for birds, but top 10 since there are many more species of birds in the world. Your list can be whatever you want, you can even put species that you haven't seen before, as long as they are still extant today.

Hmmm this is a really tough one, but I think I'd go with:

It's easy to pick favorites from certain bird orders but trying to pick a few favorites from the entire class makes you realize how small of a number 10 actually is.

In no particular order, except for the first 3. Honestly I have so many memories with these species, and their sightings were very special to me. Some like the Crested Ibis and Baikal teal were what first got me into birding, and some like the Blakiston's Fish Owl and Rock Ptarmigan were the result of a lot of effort to try and find.

4. African Sacred Ibis/Scarlet Ibis/Northern Bald Ibis

10. Black-crowned Night Heron

The reason is that some of these I often see in the wild and I love seeing them when I go birdwatching, but also some of these are at my local zoo and I kinda developed a connection to the certain individuals of that species when I volunteered there.
